Divide the desired servings by the original servings to get a multiplier. Apply it to every ingredient.

Formula

Scale Factor = Desired Servings / Original Servings

Scaled Amount = Original Amount x Scale Factor

Ejemplo Resuelto

A recipe serves 4 and calls for 2 cups of flour. You need 10 servings.

  1. 01Scale factor = 10 / 4 = 2.5
  2. 02Scaled flour = 2 x 2.5 = 5.0 cups

Preguntas Frecuentes

Do all ingredients scale linearly?

Most do, but spices, leavening agents, and salt should be scaled more conservatively. Start with 1.5x the multiplier for spices and adjust to taste.

Does cooking time change when scaling?

Larger batches may need slightly more cooking time due to increased volume, but not proportionally. Use a thermometer to check doneness.

Can I scale baking recipes?

Baking is more sensitive to ratios. Scale flour, sugar, and butter proportionally, but be careful with leavening (baking powder/soda) and eggs.
