## How to Calculate Yeast Activation Temperature ### Formula **Adjusted Temp = Base Temp + (72 - Room Temp) x 0.5** Different yeast types activate at different temperatures: - **Active dry yeast**: 105-115°F (blooming in water is required) - **Instant yeast**: 75-95°F (can be mixed directly with flour) - **Fresh cake yeast**: 75-85°F (dissolve in lukewarm water) When the room is cooler than 72°F, slightly warmer water compensates. When the room is warmer, slightly cooler water prevents overheating the yeast. Water above 120°F kills yeast.

What happens if the water is too hot?
Water above 120°F begins to kill yeast cells. At 140°F, yeast is completely dead. If your bread did not rise, overheated water during activation is one of the most common causes.
Do I need to proof instant yeast?
Instant yeast does not require proofing in water. It can be mixed directly into the dry ingredients. However, proofing it in warm water for 5 minutes confirms that it is still active.
How much yeast per cup of flour?
A standard ratio is about 1% of the flour weight. For 500 g (about 4 cups) of flour, use approximately 5 g (1.5 teaspoons) of active dry yeast. Reduce by 25% when using instant yeast.
