How to Convert to Gluten-Free Flour

General Rules

  • 1:1 GF blends: Replace wheat flour gram for gram. These blends include xanthan gum.
  • Rice flour blend: Use about 90% the weight. Add 1/2 tsp xanthan gum per cup.
  • Almond flour: Use 115% the weight. Results are denser and moister.
  • Coconut flour: Use 75% the weight but add 50% more liquid. Coconut flour is very absorbent.
  • Binding

    Gluten provides structure. Without it, add xanthan gum (1/2 tsp per cup of flour for cookies, 1 tsp for bread) unless the GF blend already contains it.

    Example Calculation

    Convert 250 g wheat flour to a 1:1 GF blend.

    1. 01GF flour: 250 x 1 = 250 g (same weight).
    2. 02Xanthan gum (if needed): 250 / 125 = 2 tsp.
    3. 03Most commercial 1:1 blends already include xanthan gum.
