Formule

How Bread Loaf Size Is Calculated

Formula

Dough Weight = Pan Volume (cu in) x 6.5 g/cu in

Bread dough should fill the pan about 2/3 full before rising. The dough will rise to fill the pan and dome slightly above it during baking.

Exemple Résolu

Calculate dough for a 9 x 5 x 3 inch loaf pan.

  1. 01Pan volume = 9 x 5 x 3 = 135 cu in.
  2. 02Dough weight = 135 x 6.5 = 878 g.
  3. 03Flour = 878 x 0.6 = 527 g.
  4. 04Water = 878 x 0.35 = 307 g.

Questions Fréquentes

What happens if I use too much dough?

Too much dough will overflow the pan during baking, creating a mushroom shape. If the dough rises more than 1 inch above the pan rim before baking, it is likely too much.

Can I use a different pan size than the recipe calls for?

Yes, but adjust the dough amount. Calculate the volume of both pans and scale proportionally. Baking time will also change for different pan sizes.

Does pan material affect the result?

Dark pans absorb more heat and bake faster, possibly over-browning. Glass pans conduct heat slowly but retain it well. Reduce temperature by 25°F for dark or glass pans.
