## How to Convert to Gluten-Free Flour ### General Rules - **1:1 GF blends**: Replace wheat flour gram for gram. These blends include xanthan gum. - **Rice flour blend**: Use about 90% the weight. Add 1/2 tsp xanthan gum per cup. - **Almond flour**: Use 115% the weight. Results are denser and moister. - **Coconut flour**: Use 75% the weight but add 50% more liquid. Coconut flour is very absorbent. ### Binding Gluten provides structure. Without it, add xanthan gum (1/2 tsp per cup of flour for cookies, 1 tsp for bread) unless the GF blend already contains it.
